- Combine chipotle peppers, adobo sauce, apple cider vinegar, garlic, cumin, oregano, cloves, and beef broth in a slow cooker.
- Add the beef chunks and turn to coat evenly in the sauce mixture.
- Cover and cook on low for 7 to 8 hours or high for 4 hours until the beef shreds easily with a fork.
- Remove the beef, shred with two forks, and return to the slow cooker to absorb the sauce for 5 minutes.
- Stir in lime juice just before serving to brighten the flavors.
