Copycat Chicken Sandwich

This chick fil a recipe for chicken sandwich uses pickle brine to keep the chicken juicy and a crisp coating for the perfect crunch.

Ingredients
  

  • 4 piece Chicken breasts, boneless skinless, pounded to 1/2 inch thickness
  • 1 cup Dill pickle brine
  • 1 cup All-purpose flour
  • 2 tbsp Powdered sugar
  • 1 tsp Smoked paprika
  • 1 cup Avocado oil, for frying
  • 4 piece Brioche buns, buttered and toasted
  • 8 piece Dill pickle slices

Method
 

  1. Submerge the chicken breasts in pickle brine, cover, and refrigerate for 1 hour.
  2. Remove chicken from brine, pat dry, then dredge in a mixture of flour, powdered sugar, and smoked paprika until fully coated.
  3. Heat avocado oil in a large skillet over medium-high heat to 350°F / 175°C.
  4. Fry the chicken for 6 to 7 minutes per side until golden brown and the internal temperature reaches 165°F / 74°C.
  5. Rest the chicken on a wire rack for 5 minutes to keep the coating crisp.
  6. Assemble each sandwich with a buttered toasted bun, fried chicken, and 2 pickle slices.
