Copycat KFC Fried Chicken

This copycat Kentucky fried chicken recipe uses white pepper and a signature spice blend to recreate the iconic crispy coating at home.

Ingredients
  

  • 8 piece Chicken drumsticks and thighs
  • 2 cup Buttermilk
  • 2 cup All-purpose flour
  • 1 tbsp White pepper
  • 1 tbsp Paprika
  • 2 tsp Garlic powder
  • 2 tsp Onion powder
  • 1 tsp Dried thyme
  • 1 tsp Dried oregano
  • 1 l Avocado oil for frying

Method
 

  1. Soak the chicken pieces in buttermilk for 15 minutes at room temperature.
  2. Combine flour, white pepper, paprika, garlic powder, onion powder, thyme, and oregano in a large bowl.
  3. Remove chicken from buttermilk, dredge each piece in the seasoned flour mixture, and press firmly to coat.
  4. Heat avocado oil to 350°F / 175°C in a deep skillet or Dutch oven.
  5. Fry the chicken in batches for 16 to 18 minutes, turning once, until golden brown and the internal temperature reaches 165°F / 74°C at the thickest part.
  6. Transfer to a wire rack and rest for 5 minutes before serving to keep the coating crisp.
