- Preheat the oven to 375°F (190°C).
- Whisk the eggs, milk, salt, and pepper in a bowl.
- Add the diced bell peppers and onions to the egg mixture and stir well.
- Pour the egg mixture into greased muffin tins.
- Dot the top of each muffin with butter.
- Bake the egg muffins for 15 minutes or until set.
- Serve the egg muffins warm.
