Ingredients
  

  • 200 g Graham cracker crumbs
  • 85 g Unsalted butter, melted
  • 680 g Cream cheese, softened
  • 200 g Granulated sugar
  • 3 piece Large eggs
  • 240 ml Sour cream
  • 2 tsp Vanilla extract
  • 450 g Fresh strawberries, sliced
  • 120 g Strawberry preserves

Method
 

  1. Preheat the oven to 325°F / 163°C and mix graham cracker crumbs with melted butter, then press firmly into the bottom of a 9-inch springform pan.
  2. Beat cream cheese and sugar until smooth, then add eggs one at a time, followed by sour cream and vanilla extract, mixing until just combined.
  3. Pour the filling over the crust and bake for 55 to 60 minutes until the edges are set but the center still jiggles slightly.
  4. Turn off the oven, crack the door open, and let the cheesecake cool inside for 1 hour to prevent cracking.
  5. Refrigerate for at least 4 hours or overnight until completely chilled and firm.
  6. Warm the strawberry preserves until pourable, toss with sliced strawberries, and spoon over the chilled cheesecake before serving.
